Traditional Portuguese tomato soup


Maria loves hosting dinner parties in her Lisbon apartment and likes to prepare lots of different courses for her guests. Here she shares her recipe for a traditional tomato soup. The ingredients are quick to prepare, then you can leave it all to cook on the hob while you get ready to welcome your guests.

Maria’s tomato soup

Serves four

Olive oil
1 onion
3-4 cloves of garlic, peeled and sliced
1.5 kg tomatoes, ripe and red, roughly cut
1 litre chicken or vegetable stock, or water
4 eggs

Heat the olive oil in a pan and sauté the onion, then add garlic and a handful of oregano. Stir in the tomatoes and stock, then leave on the stove for three hours. Season to taste. Turn down the heat and add the eggs to poach. Do not stir! Add more oregano, and serve.
